6-Ingredient Almond Cranberry Granola

Vegan Almond Cranberry Granola (6 ingredients, one bowl)

Ingredients:

-1/3 cup smooth almond butter (any nut butter will work)

-1/2 cup maple syrup

-2 cups rolled or quick oats

-2 tsp vanilla extract

-1/4 tsp salt

-1/3-1/2 cup dried cranberries

-1/4 cup hemp seeds (optional)

Directions:

1. Preheat your oven to 350F.

2. In a large bowl, add the almond butter, maple syrup, vanilla and salt. Whisk it together with a fork to combine.

3. Add the rolled oats and fold them in using a spatula.

4. Add the mixture to a large baking sheet lined with parchment or a silicone baking mat. Use the spatula to disperse and flatten it evenly on the baking sheet, it is okay if the mixture sticks together, it will create good granola clusters when cooked!

5. Place the granola in the oven for 20-25 minutes, tossing it halfway through with a spatula. You will know the granola is done when it is a golden brown colour and starting to harden. Do not worry if it is not completely hardened, it will once it cools.

6. Remove the granola from the oven and let it cool on the baking sheet for 5 to 10 minutes.

7. You can store this granola in an air-tight container or mason jar for 5 to 6 days in the fridge. You can serve it with vegan yogurt, non-dairy milk, fruit or on top of a smoothie bowl! ENJOY!
