Dairy-Free Coconut Lime Popsicles

I don't know about you, but as a kid I always loved making popsicles in the summer out of ingredients like orange juice, lemonade, etc. With popsicle molds it is pretty simple to just pour in a juice and let it freeze into a delicious sweet treat! This one however, is made with coconut milk that makes them extra creamy and healthier than other store-bought popsicles. It is also a fairly cheaper alternative since most summer treats can be pricy if you want ones with more natural ingredients.

We decided to add lime since it meshes so well with the coconut flavour, but it can definitely be omitted if you are not a fan of citrus. These are so SO versatile, you can add cocoa powder and make chocolate popsicles, peanut butter, berries, pineapple, anything you like! We also decided to add some sweetener like maple syrup to to make these more of a decadent sweet treat, but you can add less or more to your liking. We just bought cheap popsicle molds from the dollar store for these, but any type or shape of popsicle mold will work just fine.

These are definitely one of our favourite recipes at the moment! So refreshing and satisfying during the summer months. Let us know if you try them and what flavour combinations you try!

Coconut Lime Popsicles (8 medium-sized popsicles)

Ingredients:

  • 2 cans of coconut milk

  • 2 tsp of lime zest

  • Juice of 1 lime

  • 2 tsp vanilla extract

  • 1/4 cup of maple syrup (or other liquid sweetener)

  • 1/4 cup shredded coconut

  • raspberries (optional)

Directions:

1. To a large bowl, add the 2 cans of coconut milk and whisk for 20-30 seconds in case the cream and water have separated.

2. Add the lime zest, lime juice, vanilla, maple syrup, and shredded coconut and whisk it all together.

3. To the popsicle molds, pour in the coconut milk mixture. It should fit 8 small molds or 6 larger ones. To half the molds we added 3-4 raspberries to the popsicles, but this is optional.

4. Add the tops to the popsicle molds and place them in the freezer for 6 hours or overnight.

5. When ready to serve, rinse the popsicle mold container with hot water until you can twist the tops off. ENJOY!
