2-Ingredient Mango Sorbet

This may be our simplest recipe yet....only two ingredients? Yeah, I'm not kidding. This tropical mango sorbet will have you wishing you were on the beach in Mexico...or maybe it's just me. Instead of buying the sugar-filled, processed sorbets and ice cream from the store, you can blend up frozen fruit and have a healthy alternative to fulfill your ice cream cravings. And if you are like me....you ALWAYS have ice cream cravings.
To add extra sweetness we added a few teaspoons of maple syrup, but you can omit the sweeteners and leave it completely natural if you so choose. You could also add other frozen fruits like pineapple, berries or banana. We used a food processor to blend the frozen mango, but a high speed blender would work as well. I would highly recommend getting a food processor or blender on a vegan diet as it comes in handy for sooooo many recipes! This sorbet comes out as more of a soft-serve consistency, so place it in a container in the freezer if you want it a thicker. Lastly, we topped ours with shredded coconut to go with that tropical vibe, but strawberries, raspberries, nuts or granola are other great topping options as well.
Now let's get to the recipe! With the amount of talking I'm doing you could already have this recipe made....my bad.

Mango Sorbet (1 large or 2 small servings)
Ingredients:
2 & 1/2 cups frozen mango chunks
2tsp maple syrup (or other liquid sweetener)
Directions:
1. Add the ingredients to a food processor or high-speed blender.
2. Blend on high for 3-4 minutes or until it is a smooth, ice-cream consistency. You may have to stop halfway through to scrape down the sides with a spatula.
3. And BAM, you have a healthy, quick sorbet to fulfill your sweet-tooth at any time! We topped ours with some shredded coconut, but feel free to add whatever toppings you like.
